I think to counter food decaying, you should be able to pickle certain things, or make jams or kompot type things with fruit.
You could get jars and bottles from farms and houses (or craft them) and there should be barrels to make larger quantities, and it would take a long time to make the preserves.
My eastern European heratige is really showing with this one.
