Repairing vehicles should require finding parts to repair the area of the vehicle that sustained damage. This would make vehicles harder to maintain and would remove certain things, like sitting in the back of an APC and a blowtorch and becoming practically invincible. Destroying vehicles should also be different to how it currently is.
In the current game, as long as your car is above 1% you’re good. I say that the parts of the vehicles that get damaged should determine what happens to the vehicle when it loses enough health. Compromising the engine would cause a vehicle to explode. Or as an alternative you could destroy enough of the vehicle that it can no longer properly run and unless you repair it within a certain amount of time it would despawn.
Vehicles shouldn’t, in any case besides being struck by an explosive, explode. Getting disabled and beaten up, yes. Shoot the engine with an anti-materiel rifle? It of course should be destroyed. Shooting the fuel tank should cause it to leak. It shouldn’t explode unless the bullet is a tracer and the fuel is gasoline, not diesel. Other kinds of component damage should also be possible, like breaking windows and damaging the hull. The car should be repairable even after a massive amount of abuse, and the only way to completely destroy it is to blow it up. Vehicles should be hard to repair though, so that it isn’t just a minor inconvenience getting your car shot at.
The doors and stuff should come off, but the actual car should still be drivable even when it has no doors and the body of the car is fucked up with bullets or whatever.
Parts of the car should need fixing, like engine components (which could be crafted) tires would need replacing, and the vehicle would need to be powerful or have offroad tires to handle on rough terrain, so maintaining vehicles should be harder, but actually destroying the vehicle would be harder as well.

Of course, there should be limitations to how much abuse a vehicle can take. If a car drives over an antitank mine, that wreck’s not going to be very salvageable.
